Naked Protein Brownies with Coffee Frosting

- 8 scoops Naked Nutrition Protein Brownie Mix
- ¾ cup water
For the Coffee Frosting
- ½ cup cream cheese or vegan cream cheese
- ½ cup butter or vegan butter
- 1 cup date sugar or coconut sugar, or other favorite granulated sugar alternative
- 1 teaspoon vanilla extract
- 2 teaspoons espresso powder or finely ground coffee beans
Preheat oven to 350°F (180°C). Lightly spray an 8x8 baking dish with non-stick spray (or line with parchment paper) and set aside.
In a medium bowl, mix the Naked Nutrition Protein Brownie Mix with water. Pour batter into prepared baking dish and bake on middle rack for 20 minutes.
For the Coffee Frosting
Using an electric mixer fitted with the paddle attachment (or a handheld mixer), beat cream cheese and butter on medium speed until light and fluffy (about 3 minutes).
Add vanilla extract, espresso powder and sugar. Beat on medium speed until frosting is lighter in color and fluffy (about 3-5 minutes). Add more sugar or espresso powder to taste.
Once the brownies have cooled, spread coffee frosting over the top. Sprinkle with a bit more espresso powder and chocolate chips, if desired.
