Naked Protein Brownies with Coffee Frosting

Ingredients

  • 8 scoops Naked Nutrition Protein Brownie Mix
  • ¾ cup water

For the Coffee Frosting

  • ½ cup cream cheese or vegan cream cheese
  • ½ cup butter or vegan butter
  • 1 cup date sugar or coconut sugar, or other favorite granulated sugar alternative
  • 1 teaspoon vanilla extract
  • 2 teaspoons espresso powder or finely ground coffee beans

Instructions

  • Preheat oven to 350°F (180°C). Lightly spray an 8x8 baking dish with non-stick spray (or line with parchment paper) and set aside.
  • In a medium bowl, mix the Naked Nutrition Protein Brownie Mix with water. Pour batter into prepared baking dish and bake on middle rack for 20 minutes.

For the Coffee Frosting

  • Using an electric mixer fitted with the paddle attachment (or a handheld mixer), beat cream cheese and butter on medium speed until light and fluffy (about 3 minutes).
  • Add vanilla extract, espresso powder and sugar. Beat on medium speed until frosting is lighter in color and fluffy (about 3-5 minutes). Add more sugar or espresso powder to taste.
  • Once the brownies have cooled, spread coffee frosting over the top. Sprinkle with a bit more espresso powder and chocolate chips, if desired.
