Ingredients
6medium or largepotatoesrusset
8ozcream cheeseroom temperature
1Csour cream
½Cunsalted butterroom temperature
2eggsbeaten
2teaspoonsaltmore to taste
¼teaspoonpeppermore to taste
½Csliced green onions
paprikato sprinkle on top (optional)
Instructions
Cut potatoes into quarters or smaller. Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
Mash potatoes using a potato masher or electric beater.
Add the rest of the ingredients and mix until no lumps remain. Place in buttered 1 ½ quart casserole dish. Sprinkle with paprika (if desired). Cover and refrigerate overnight or until cooking time.
When ready to bake, heat oven to 350°F. Let potatoes rest at room temperature for 15 minutes. Uncover and bake for 35-40 minutes or until hot through.
