Cheddar Muffins

The perfect muffin to go with your winter soup!

Ingredients

  • 2 C all-purpose flour
  • 1 Tbsp baking powder
  • 1 Tbsp granulated sugar
  • 1 tsp kosher salt
  • 1/4 tsp black pepper more to taste
  • 2 C shredded cheddar cheese
  • 1 1/4 C milk
  • 1 large egg room temperature
  • 2 Tbsp vegetable oil

Instructions

  • Preheat oven to 400°F. Spray a muffin tin with non-stick spray. Set aside. 
  • In a large bowl, combine dry ingredients, including cheddar. 
  • Make a well in the center and add wet ingredients. Mix just until moistened.
  • Use a muffin scoop to spoon batter into the muffin tin, filling 2/3 full. 
  • Bake 18-20 minutes until tops are golden. Cool in pan for 2 minutes, remove and serve. 

Notes

This recipe makes just over 1 dozen, but I always double it! Kids and adults love these!
