Healthy Peanut Butter Oatmeal Bars

Ingredients

  • 1 cup + 2 tablespoons creamy peanut butter divided
  • ½ cup maple syrup
  • 1 ⅓ cups oatmeal
  • 1 tablespoon flaxseed meal
  • 1 teaspoon vanilla extract

Chocolate Topping

  • cup chocolate chips
  • 2 tablespoons peanut butter
  • 1 teaspoon coconut oil

Instructions

  • Line a 9x9 baking dish with parchment. Set aside.
  • In a medium bowl, combine 1 cup peanut butter and maple syrup. Microwave in 20 second intervals until mixture is smooth.
  • Add vanilla, flaxseed and oatmeal. Stir to combine.
  • Press mixture evenly into dish using a rubber spatula. Set aside.
  • In a small bowl, combine chocolate chips, 2 Tablespoons peanut butter and coconut oil. Melt in 20 second intervals until smooth.
  • Pour chocolate on top of oatmeal mixture and spread evenly.
  • Refrigerate for at least 2 hours. Slice into bars and enjoy!
