Healthy Peanut Butter Oatmeal Bars

- 1 cup + 2 tablespoons creamy peanut butter divided
- ½ cup maple syrup
- 1 ⅓ cups oatmeal
- 1 tablespoon flaxseed meal
- 1 teaspoon vanilla extract
Chocolate Topping
- ⅔ cup chocolate chips
- 2 tablespoons peanut butter
- 1 teaspoon coconut oil
Line a 9x9 baking dish with parchment. Set aside.
In a medium bowl, combine 1 cup peanut butter and maple syrup. Microwave in 20 second intervals until mixture is smooth.
Add vanilla, flaxseed and oatmeal. Stir to combine.
Press mixture evenly into dish using a rubber spatula. Set aside.
In a small bowl, combine chocolate chips, 2 Tablespoons peanut butter and coconut oil. Melt in 20 second intervals until smooth.
Pour chocolate on top of oatmeal mixture and spread evenly.
Refrigerate for at least 2 hours. Slice into bars and enjoy!
