Chocolate Granola with Almonds and Chocolate Chips

Makes an amazing healthy after-dinner treat on top of raspberry yogurt!

Ingredients

  • 1 cup oats rolled or quick
  • 1 cup chopped almonds or any nut you like best
  • 1 cup unsweetened coconut flakes
  • ¼ cup cocoa powder
  • pinch salt omit if using salted nuts
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • ¾ cup chocolate chunks or chocolate chips

Instructions

  • Preheat oven to 275°F
  • Combine all ingredients except chocolate chunks in a large mixing bowl, stirring well.
  • Spread flat across a light colored baking sheet (the granola is dark, so it's hard to tell when it's done if cooked on a dark baking sheet)
  • Bake for 40 to 50 minutes, stirring every 20 minutes to prevent burning.
  • Remove from oven and allow to cool.
  • Once cool, stir in chocolate chunks. ENJOY!

Notes

Serve over yogurt or eat by the handful! Will keep in an airtight container for 1 month.
