Taco Soup

Like eating a hot taco in a bowl! Delicious and filling, perfect for a chilly weeknight.

  • 1 yellow onion diced
  • 2 teaspoons garlic diced
  • 1 lb ground beef
  • 1 4.5 oz can green Chile mild
  • 1 28 oz can diced tomatoes
  • 2 15 oz cans black beans drained and rinsed
  • 1 8 oz can tomato sauce
  • 3 tablespoons taco seasoning more to taste
  • 1 15 oz can corn kernels or 1 1/2 cups frozen corn
  • 2 orange bell peppers diced
  • 1 32 oz jug low sodium beef broth


  • In a large stock pot, add diced onions. Cook until translucent and fragrant, about 3 minutes.
  • Add garlic and cook for 1 minute more.
  • Add beef and cook until no more pink remains. Drain fat from beef in a strainer.
  • Add green chile, diced tomatoes, black beans, tomato sauce, taco seasoning, corn, bell peppers and beef broth.
  • Cook on medium heat until steaming.
  • Top it off with fresh avocado, sour cream, cilantro and cheese. Serve with tortilla chips. Enjoy!
