This is truly my new favorite chocolate cookie recipe. Just the right amount of chocolate flavor, the perfect chewy cookie texture, and I am absolutely nuts for pecans (I'm so clever, I know). The texture is just right, chewy but not gooey. It also comes together really fast.

The perfect baking tools yields the perfect cookies every time
I've included a list of my favorite cookie baking tools at the bottom of this post for you. If you bake cookies often, like I do, then you should really have these 3 things to make perfect cookies every time. Good baking sheets are essential to a well-baked cookie. I recently got these cookie sheets from Amazon and I absolutely love them! To keep your cookies uniform in size and shape (and keep your hands clean), use this cookie scoop. And to keep your cookie bottoms baked perfectly and make clean up really quick, use these pre-sized parchment paper sheets. Using the right tools is important for baking, plus it makes your job so much easier!

Directions for Baking Double Chocolate & Pecan Chewy Cookies
Preheat oven to 350°F. Line a baking sheet with parchment paper or silpat mat.
In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar until creamy. Add eggs one at a time until fully incorporated.
In a medium bowl, combine flour, cocoa powder, baking powder and salt.
Add dry ingredients to the mixer slowly until fully combined, scraping the sides of the bowl once or twice.
Add chocolate chips and pecans to dough and mix in with a wooden.
Scoop using a cookie scoop or form a ball of about 2 tablespoon of dough and place on cookie sheet. Bake 8 to 9 minutes. Tops will still be soft.
Cool on baking sheet 1 minute, then transfer to wire racks to cool.

Double Chocolate Chewy Cookies
Ingredients
- ¾ C unsalted butter room temperature
- 1 ½ C sugar
- 2 eggs room temperature
- 1 teaspoon vanilla
- 1 C all purpose flour
- ¾ C cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- 1 C chocolate chips more to taste
- 1 C chopped pecans best when lightly toasted
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or silpat mat.
- In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar until creamy. Add eggs one at a time until fully incorporated. Add vanilla.
- In a medium bowl, combine flour, cocoa powder, baking powder and salt.
- Add dry ingredients to the mixer slowly until fully combined, scraping the sides of the bowl once or twice.
- Optional: This is where I separate the dough into 3 bowls and add different treats. One with chocolate chips & pecans, one with white chocolate chips and one with peanut butter chips. Everyone is happy!
- Scoop using a cookie scoop or form a ball of about 2 tablespoon of dough and place on cookie sheet. Bake 8 to 9 minutes. Tops will still be soft.
- Cool on baking sheet 1 minute, then transfer to wire racks to cool.
